I just found something to bring my BBQ up a Notch
Anybody who knows me knows that Outdoor Cooking (BBQ, Smoking, etc.) is probably my biggest passion. I have been doing BBQ for many years, but I’d say that it has been in the past 4+ years that I’ve kicked it up a notch. I didn’t BBQ much in the Philippines because I had others who could do the cooking or cooking out on a grill. After coming back to the States, though, I upped my game.
Over the weekend, I learned about something that would take my BBQ to the next level. It’s called Cowboy Butter. It is my understanding that this got started on Tik Tok, but I never saw it there. Coincidently, at around the same time I saw it on YouTube and a friend mentioned it to me. When I saw it on YouTube it looked REALLY good, and I knew I had to give it a try. Cowboy Butter takes Butter and kicks it up a few levels.
Sam the Cooking Guy
There is a cook that I follow on YouTube named “Sam the Cooking Guy”. Sam mostly cooks outdoors like I do. I have seen him in the kitchen a few times, but out on a grill or smoker the vast majority of the time. He cooks a lot of good food, and I have to admit that I have used a lot of his recipes, and even claimed them as my own when people like them, LOL. I do invent things of my own, but getting stuff from Sam is a good route, because he cooks great food.

For your convenience and not having to copy it all down from the video, here is a list of the ingredients Sam uses:
Sam the Cooking Guy Cowboy Butter
- Low Heat!
- 1 stick of butter (1/2 Cup)
- Zest of Half a lemon
- Juice of a Half Lemon
- 4 Cloves of Garlic
- 1 TBSP Dijon Mustard
- 1 TBSP Prepared Horseradish (not horseradish cream, PREPARED Horseradish)
- 1/2 Teaspoon Smoked Paprika
- 1/4 Teaspoon Chipotle Chili Powder
- 1/4 Teaspoon Crushed Red Pepper Flakes
- 1/2 Tablespoon Dried Thyme
- 1 Teaspoon Soy Sauce
- Diced Red Onions
- Finely Chopped Parsley
- Chopped Green Onion
- Mix all ingredients in pan
- Salt and Pepper
- Cook until melted but still a little thick
Butterflied Chicken
The same video above also shows how to make a butterflied Chicken Drumstick. These drumsticks are excellent basted with Cowboy Butter. I cooked these last night on my Weber Genesis Grill. Butterflying the drumsticks is really great, it was my first time to do this or even hear of it. When the chicken is butterflied like this it makes kind of a little well where you can put plenty of Cowboy Button on/in it to really kick up the flavor. I found that the butterflying made the drumsticks stick more to the grill and I swore I would never butterfly chicken legs again, but after eating the chicken, I’m doing it! I just need to put some oil on the grates or something, I will find the best way through experimentation. The best thing about experimenting to try a fix means that you have to make this dish over and over again to find the best method to stop the sticking. That means you get to taste and enjoy a lot of good chicken!
Believe me, if you make Cowboy Butter and/or this Chicken you won’t be upset!
